Indulgent carrot cake bars with caramel notes and creamy cream cheese frosting.
Ingredients:
  • 3/4 cup unsalted butter
  • 2/3 cup brown sugar, firmly packed divided
  • 1 egg, room temp
  • 1 egg yolk, room temp
  • 1 1/2 teaspoons vanilla extract
  • 2/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 1/2 cups grated carrot
Instructions:
  • In a light-colored saucepan over medium heat, melt butter until it turns nutty and starts to brown, while stirring constantly for about 5 minutes. Measure out 1/4 cup of the browned butter to use in the frosting, then transfer the rest into a large mixing bowl. Let it cool for 10 to 15 minutes before proceeding.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare an 8x8-inch square pan by lining it with parchment paper that overhangs on all sides.
  • Into the bowl with the fragrant brown butter, combine it with brown sugar and whisk together till smooth. Mix in the egg, egg yolk, and vanilla until completely blended. Add the flour, baking soda, cinnamon, ginger, salt, nutmeg, and allspice; stir until just combined. Gently fold in the vibrant shredded carrots. Transfer the batter into the prepared pan, spreading it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until bars spring back when lightly touched in the center.
  • Take the bars out of the oven and let them cool in the pan for 10 minutes. Using the parchment paper overhang, lift the bars out of the pan and transfer them to a wire rack to cool completely.
  • To make the frosting, use an electric mixer to beat cream cheese in a large bowl until smooth. Mix in 1/4 cup of reserved brown butter on medium-high speed until fully combined. Add vanilla, salt, and 1 cup of powdered sugar and mix until smooth. Incorporate the remaining 1 cup of powdered sugar until fully combined. Continue beating the frosting on medium speed for 2 to 3 minutes until it is completely smooth. Cover the bowl and refrigerate the frosting until needed.
  • Spread the bars generously with frosting. For clean slices, refrigerate the frosted bars for approximately 1 hour to let the frosting firm up. Cut the bars into 16 pieces.
