Delicious carrot cake bars made with baby food carrots for a moist texture and subtle carrot flavor, topped with foolproof cream cheese frosting.
Ingredients:
  • 1.5 cups vegetable oil
  • 2 cups white sugar
  • 4 eggs, beaten
  • 2 (4 ounce) jars carrot baby food
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1.5 teaspoons ground cinnamon
  • 1 (8 ounce) package cream cheese
  • 0.25 pound butter, softened
  • 2 cups confectioners' sugar
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you prepare two 8x11 inch pans by greasing and flouring them.
  • In a bowl, whisk together oil, sugar, eggs, and carrots until well combined. In another bowl, mix flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  • Transfer the mixture into the pans and bake for 30 minutes, then let it cool after removing from the oven.
  • Combine cream cheese and butter, then blend in powdered sugar and vanilla until silky. Frost cooled cakes generously and enjoy!
