Candied carrot, raisin, and cashew dessert. Swap carrots for beets for a unique Beetroot halwa. A sweet treat even for picky eaters.
Ingredients:
  • 4 cups grated carrots
  • 2 cups milk
  • 1 cup white sugar
  • 1 tablespoon butter
  • 0.5 cup cashew halves
  • 0.5 cup raisins
  • 1 pinch ground cardamom
Instructions:
  • In a saucepan over medium heat, let the carrots simmer in milk until most of the milk evaporates, about 10 minutes. Add sugar and stir until the mixture thickens. Be sure to stir constantly to prevent burning. Remove from heat when done.
  • In a skillet over medium heat, melt butter until sizzling. Add cashews and raisins, stirring until cashews turn a golden hue. Pour over carrot mixture and finish with a sprinkle of aromatic ground cardamom on top.
