Whip up adorable Carrot Brownies using Betty Crocker™ Fudge Brownie Mix, topped with green licorice and orange-hued frosting for a festive Easter delight!
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • Water, vegetable oil and eggs called for on brownie mix box
  • 1 1/4 cups from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 3/4 teaspoon neon orange gel food color from 1 box Betty Crocker™ Neon Gel Food Color
  • 8 (7-inch) green licorice twists (from two 12.4-oz bags of rainbow-colored licorice twists)
  • 1/4 teaspoon unsweetened baking cocoa, if desired
Instructions:
  • Preheat your oven to 350°F. Line a 13x9-inch pan with foil, leaving some overhang. Grease the foil on the bottom and sides with shortening or cooking spray.
  • Follow the brownie mix instructions for baking. Allow to cool thoroughly on a rack for approximately 1 hour. Transfer the brownies to the freezer in the pan for 30 minutes.
  • Carefully lift the brownies out of the pan using the foil, then peel the foil away. In a small bowl, mix the frosting with food color until well blended. Spread the colored frosting over the top of the brownies. Refrigerate for 15 minutes to help the frosting set before cutting for easier serving.
  • Cut the brownies into 24 triangles by slicing into 3 horizontal rows. Then, cut each row into 8 triangles with a 2-inch base. Remember to clean the knife with a paper towel after each cut. Save the end pieces for snacking.
  • Prepare greens for carrot: Cut each licorice twist into 3 pieces and then slice each piece lengthwise to create thin green strips, leaving one end attached. Using a small paring knife, make a 1/2-inch deep slit in the short end of each triangle and insert the licorice piece. Repeat for the rest of the licorice pieces and brownie triangles.
  • For a rustic carrot appearance, lightly brush cocoa on top of the frosted brownie using a food-safe paintbrush. Store covered loosely in a single layer at room temperature.
