Decadent carrot and cheese casserole with crispy buttery topping, perfect with honey glazed ham.
Ingredients:
  • 4.5 cups sliced carrots
  • 0.66699999570847 cup crushed buttery round crackers
  • 3 tablespoons margarine, melted
  • 0.5 cup chopped onion
  • 3 tablespoons all-purpose flour
  • 1.5 cups milk
  • 0.66699999570847 cup shredded processed cheese
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Steam the carrots until tender yet firm for 6-10 minutes over boiling water. Drain. In a small bowl, mix crushed crackers with melted margarine, ensuring they are well combined. Set aside.
  • - Heat 2 tablespoons of margarine in a medium skillet over low heat. Saute onions until tender. - Stir in flour, salt, and pepper. Cook for a few minutes, stirring to prevent browning. - Gradually pour in milk, stirring constantly. Increase heat to medium and cook until bubbly and thickened. - Add cheese and stir until smooth. Fold in carrots.
  • Transfer the mixture into a 9x12 inch baking dish and generously sprinkle with the crumb mixture.
  • Place in a hot oven for 20 minutes, or until the top is bubbly and golden brown.
