Carrots with balsamic glaze and roasted hazelnuts

Steam this healthy side dish for a delicious twist!
Ingredients:
  • 2 large carrots, peeled
  • 1 bunch baby purple carrots, trimmed, peeled
  • 125.00 ml balsamic vinegar
  • 20.00 gm caster sugar
  • 20.00 ml roughly chopped dry-roasted hazelnuts
Instructions:
  • Slice large carrots into 5mm-thick diagonal slices. Steam until tender over simmering water for 7 to 8 minutes.
  • In a small saucepan over medium heat, combine vinegar and sugar. Stir and cook for 1 to 2 minutes until sugar dissolves. Bring to a boil, then reduce heat to low and simmer for 5 minutes until reduced by half. Transfer carrots to a bowl, drizzle with balsamic mixture, season with salt and pepper, sprinkle with hazelnuts, and serve.
