Cashew Chicken Stir-Fry

Flavorful one-pan cashew chicken stir-fry with fresh veggies for a quick and tasty meal!
Ingredients:
  • 4 skinless, boneless chicken breast halves, cut into bite-size pieces
  • 1 tablespoon Cajun seasoning blend (such as Tony Chachere's®), or to taste
  • 1.25 cups chicken broth
  • 1 tablespoon cornstarch
  • 4 teaspoons soy sauce, divided
  • 2 tablespoons olive oil, divided
  • 2 cups shredded cabbage
  • 25 sugar snap peas, chopped
  • 10 small spears fresh asparagus, trimmed and cut into bite-size pieces
  • 3 stalks celery, chopped
  • 0.5 red bell pepper, cut into thin strips
  • 2 green onions, chopped
  • 1 (8 ounce) can sliced bamboo shoots, drained
  • 0.5 cup cashews
  • 1 pinch paprika, or to taste
Instructions:
  • Season chicken pieces generously with flavorful Cajun seasoning.
  • Combine chicken broth, cornstarch, and 3 teaspoons soy sauce in a bowl and whisk until smooth.
  • In a sizzling hot frying pan or wok, sear chicken in 1 tablespoon of olive oil until fully cooked, about 6 to 10 minutes. Transfer chicken to a plate and let any excess liquid drip off.
  • In a hot frying pan or wok, quickly stir-fry the cabbage, snap peas, asparagus, celery, red bell pepper, green onions, and bamboo shoots in 1 tablespoon of olive oil for 1 minute. Add 1 teaspoon of soy sauce and cook until vegetables are tender yet crisp, about 3 minutes.
  • Mix the chicken into the cabbage, then pour the chicken broth over it. Simmer on medium heat until the sauce thickens, about 1 minute. Lower the heat, add cashews, and cook for 1 more minute. Finish by sprinkling paprika on top.
