Creamy vegan cashew sour cream perfect for topping soups, chili, and tacos.
Ingredients:
  • 1 cup raw cashews
  • 7 tablespoons water
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons rice vinegar
  • 0.5 teaspoon kosher salt
Instructions:
  • Soak cashews in a bowl covered with water for 8 hours to overnight until they are soft and plump.
  • Begin by transforming the drained and rinsed cashews into a high-powered blender. Next, combine with 4 tablespoons of water, lemon juice, vinegar, and salt. Blend the mixture until the cashews are finely ground. Remember to scrape down the sides of the blender, then pour in the remaining water and blend until ultra-smooth.
  • Pour the cashew cream into a jar with a secure lid and refrigerate.
