30-minute sweet and sour Asian pasta salad with mushrooms, pea pods, cabbage, chestnuts, and cashews.
Ingredients:
  • 3 ounces uncooked capellini (angel hair) pasta, broken in half
  • 4 cups shredded Chinese (napa) cabbage
  • 1 cup sliced mushrooms (3 ounces)
  • 1 cup Chinese pea pods, cut in half (4 ounces)
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 3/4 cup sweet-and-sour sauce
  • 1/3 cup plain yogurt
  • 1/2 cup chopped salted cashews
Instructions:
  • Prepare pasta according to package instructions. Then rinse under cold water and drain.
  • Combine pasta, cabbage, mushrooms, pea pods, and water chestnuts in a large bowl. Whisk together sweet-and-sour sauce and yogurt, then pour over the salad and toss until everything is coated. Finish by sprinkling cashews on top.
