Create adorable mini fruit pizzas shaped like playing cards and dice using square cookies, vertically sliced strawberries shaped like hearts, and blueberries as the dots.
Ingredients:
  • 1 cup unsalted butter, softened
  • 2 cups white sugar
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 tablespoon baking soda
  • 0.25 cup buttermilk
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 cup frozen whipped topping, thawed
  • 1 cup confectioners' sugar
  • 1 pint strawberries, sliced from top to bottom
  • 1 pint blueberries
Instructions:
  • In a large bowl, cream the butter and white sugar until smooth. Add eggs one at a time, blending well after each. Mix in the vanilla. Combine flour, baking soda, and salt; fold into the mixture alternately with buttermilk, mixing until just combined. Add more flour if too sticky. Cover and refrigerate for 1 hour.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C). Roll your dough out on a lightly floured surface to a lovely 1/4 inch thickness. Use a pizza cutter or knife to create squares and rectangles. Space out the cookies about 2 inches apart on ungreased cookie sheets.
  • Bake until edges turn light golden brown, about 6 to 8 minutes in the preheated oven.
  • Prepare the frosting while the cookies bake. In a medium bowl, mix cream cheese and confectioners' sugar until creamy, then fold in the whipped topping until fully combined.
  • Thinly spread the frosting onto each cookie. Create heart cards with strawberry slices on the rectangular cookies and dice with blueberries on the square cookies. Chill until ready to serve or enjoy immediately after frosting. These treats are most delicious when served cold.
