Cauliflower dirty rice with Cajun flair, topped with hot sauce and scallions.
Ingredients:
  • 1 pound ground beef
  • 1 (10 ounce) bag frozen seasoning blend (onions, celery, and green and red bell peppers)
  • 4 cups shredded cauliflower (such as Green Giant™ Cauliflower Crumbles®)
  • 1 teaspoon minced fresh garlic
  • 1 (14 ounce) can beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons dried parsley
  • 1 teaspoon Creole seasoning (such as Tony Chachere's®)
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion salt
  • 1 bay leaf
  • 0.5 cup chopped green onions
  • 1 dash hot sauce, or to taste
Instructions:
  • Turn up the heat on a large skillet. Cook and stir the beef until it's nicely browned and crumbly, which should take about 5 to 7 minutes. Remove excess grease. Transfer the beef to a plate and keep it aside for later.
  • Sprinkle seasoning blend into the skillet and cook on medium heat until warm, for about 2 to 3 minutes. Toss in cauliflower and garlic; continue to cook and stir until slightly tender, also for about 2 to 3 minutes.
  • Combine the cooked ground beef, beef broth, Worcestershire sauce, parsley, Creole seasoning, pepper, garlic powder, onion salt, and bay leaf with the cauliflower mixture. Cook and stir occasionally until most of the beef broth is absorbed, for about 8 to 10 minutes.
  • Add the vibrant green onions and spicy hot sauce to the mixture. Remove the bay leaf before presenting the dish.
