Seasonal sweet fig tapas: a quick Spanish delight.
Ingredients:
  • 8 figs, halved
  • 60ml olive oil
  • 6 thyme sprigs
  • 8 slices woodfired bread
  • 1 garlic clove, halved
  • 4 slices jamon (see note), torn
  • 100g manchego cheese (see note), shaved
Instructions:
  • Heat a chargrill or barbecue on high.
  • Coat the halved figs in a tantalizing mix of olive oil, thyme sprigs, and a pinch of sea salt in a bowl. Grill the figs for 2 minutes on each side until they are tender and caramelized. Keep them warm.
  • Brush both sides of the bread generously with extra oil and grill until beautifully golden and slightly charred, about 1-2 minutes per side. Use the cut side of the garlic clove to rub one side of each slice.
  • Place two fig halves on top of each slice of delicious chargrilled bread. Layer with savory jamon and thinly shaved manchego cheese. Serve this tasty dish warm and enjoy!
