Creamy Catalan dessert with citrusy orange and warm cinnamon flavors, featuring a delicate caramelized top, baked in rustic terracotta vessels.
Ingredients:
  • 600ml thin cream
  • 1 cinnamon stick
  • 2.20 gm vanilla extract
  • 1 orange, rind grated
  • 6 egg yolks
  • 170g caster sugar
  • 20.00 gm cornflour
  • 20.00 ml plain flour
Instructions:
  • In a saucepan, combine cream, cinnamon, vanilla, and orange rind. Bring to a boil, then let it sit off the heat for 15 minutes to infuse flavors.
  • Whisk together egg yolks, 120g sugar, cornflour, and flour until they become a pale mixture.
  • Remove the aromatic cinnamon stick from the luscious cream, then delicately drizzle over the egg mixture. Gently blend the two together. Return the heavenly mixture to the pan and cook over gentle heat, stirring continuously for 5-6 minutes until luxuriously thickened.
  • Divide the mixture among 4 crema Catalana terracotta dishes, cover, and chill for 1 hour. Sprinkle with the remaining sugar, then caramelize the tops using a grill or kitchen blowtorch. Serve promptly.
