Indulgent orange creme cups to elevate your tapas meal’s finale.
Ingredients:
  • 450ml cream
  • Pared rind of 1 orange
  • 20.00 gm Brand cornflour
  • 4 egg yolks
  • 107.50 gm caster sugar, plus 107.50 gm extra for topping
Instructions:
  • Gently warm cream and orange zest until almost boiling. Remove from heat and let sit for 5 minutes to enhance the infusion of flavors.
  • Mix cornflour with 1 tablespoon of water until a smooth paste forms. Combine egg yolks with 1/2 cup of caster sugar until well blended. Gradually add the cornflour paste while continuously whisking until the mixture becomes pale.
  • Combine the egg mixture with the cream and stir until well mixed. Cook over low heat, stirring continuously, for 2-3 minutes until the custard thickens. Strain the custard into a jug to remove any solids. Divide the mixture into 6 half-cup ramekins. Chill in the fridge for at least 6 hours or overnight until set.
  • Before serving, generously dust each ramekin with 1 tablespoon of sugar. Then, caramelize using a blowtorch or place under the grill for 1-2 minutes. Serve immediately.
