Indulge in decadent Spanish creamy desserts for a taste of 'la vida loca'!
Ingredients:
  • 505.00 gm thickened cream
  • 515.00 gm milk
  • 4 x 8cm strips orange rind
  • 1 cinnamon stick
  • 1 vanilla bean, split
  • 8 egg yolks
  • 141.90 gm caster sugar
  • 32.50 gm cornflour
  • 59.40 gm brown sugar
Instructions:
  • In a heavy-based saucepan over medium heat, combine cream, milk, orange rind, cinnamon, and vanilla. Heat gently (without boiling), stirring occasionally, for 10 to 12 minutes until it simmers. Allow it to cool for 30 minutes, then strain through a fine sieve, discarding solids. Wash and dry the saucepan for the next step.
  • Beat egg yolks and caster sugar with an electric mixer until pale and thick. Mix in cornflour until just combined. Gradually add cream mixture while whisking. Transfer to a saucepan and cook over low heat for 20-30 minutes, stirring until thickened. Strain through a fine sieve into a jug. Pour into 8 heatproof dishes and refrigerate for 4 hours or overnight.
  • Preheat the grill to high. Place a wet tea towel in a large dish, then add half of the dishes and sprinkle with half of the brown sugar. Arrange ice cubes around the dishes to prevent overcooking. Grill for 2 to 3 minutes until the sugar starts to melt and caramelize. Repeat with the remaining dishes and sugar. Let it rest for 5 minutes, then serve.
