Discover the versatile low-carb hero: Cauliflower rice. Quickly pulse cauliflower into rice-like pieces, toast in a skillet for flavor and texture. Perfect as a side, in soups, casseroles, or burritos. Delicious and adaptable for all diets.
Ingredients:
  • 4 cups cauliflower florets
  • 2 tablespoons olive oil
  • 1/2 cup chopped green onions (8 medium)
  • 1/2 teaspoon sea salt flakes
  • 1/4 cup reduced-sodium chicken broth
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh thyme leaves
Instructions:
  • Using a food processor, pulse 1 cup of cauliflower until it resembles grains of rice. Transfer to a large bowl and repeat this process with the remaining cauliflower in three more batches, resulting in about 3 1/2 cups of processed cauliflower.
  • Heat a 12-inch skillet over medium-high heat until it's hot. Add 1 tablespoon of oil, followed by green onions and salt. Cook for 1 to 2 minutes until the green onions soften. Then add the remaining 1 tablespoon of oil and the cauliflower, tossing to coat. Continue cooking for 4 to 6 minutes until the cauliflower is lightly toasted and dried out.
  • Pour in flavorful chicken broth and bring it to a gentle simmer until the liquid is absorbed. Blend in fresh parsley and thyme for a burst of fragrant herbs.
