Delicious and flavorful cauliflower fried rice with green onions, peas, eggs, pork, and garlic.
Ingredients:
  • 2 cups frozen peas
  • 0.5 cup water
  • 0.25 cup sesame oil, divided
  • 4 cups cubed pork loin
  • 6 green onions, sliced
  • 1 large carrot, cubed
  • 2 cloves garlic, minced
  • 20 ounces shredded cauliflower
  • 6 tablespoons soy sauce
  • 2 eggs, beaten
Instructions:
  • In a saucepan, combine peas and water. Bring to a gentle boil, then simmer over medium-low heat, stirring occasionally, until peas are tender and warmed through, approximately 5 minutes. Drain off excess water before serving.
  • In a heated wok, swirl 2 tablespoons of aromatic sesame oil. Sear pork until golden and fully cooked, approximately 7 to 10 minutes. Transfer the succulent meat to a plate.
  • In a heated wok with 2 tablespoons of sesame oil, saute green onions, carrot, and garlic until just softened, around 5 minutes. Add cauliflower and cook until tender yet firm, 4 to 5 minutes.
  • Combine pork, peas, and soy sauce with the cauliflower mixture and stir-fry until everything is hot and gets a nice brown color, which should take about 3 to 5 minutes.
  • Transfer the pork-cauliflower mixture to one side of the wok, creating space for the beaten eggs. Pour the eggs onto the empty side and scramble until fully cooked, about 3 to 5 minutes. Finally, mix the cooked eggs into the pork-cauliflower mixture, ensuring to break up any large pieces.
