Gluten-free and low-carb cauliflower pizza rolls, ideal for entertaining a crowd.
Ingredients:
  • 1 large head cauliflower, cut into large chunks
  • 2.5 cups shredded mozzarella cheese, divided
  • 0.5 cup freshly grated Parmesan cheese
  • 1 large egg
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.33333334326744 cup pizza sauce
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C), then line a muffin tin with parchment paper squares.
  • Grate cauliflower into a microwave-safe bowl using a fine grater, then chop any leftover pieces into small bits and mix in.
  • Microwave cauliflower until soft and tender, about 4 to 6 minutes. Transfer to a clean dish towel and allow to cool for 15 to 20 minutes before handling.
  • Wrap the towel tightly around the cauliflower and press to remove excess liquid; the drier, the better.
  • Mix together the cauliflower, 1 cup of mozzarella cheese, Parmesan cheese, egg, salt, pepper, garlic powder, and onion powder in a large bowl until fully combined. Spoon the mixture evenly into the muffin cups, then press down with a spoon to pack it in tightly.
  • Once the crust is gloriously golden brown from the preheated oven, approximately 15 minutes, take it out and generously spoon pizza sauce onto each crust. Sprinkle the remaining 1 1/2 cups of mozzarella cheese on top for a cheesy delight.
  • Once the cheese is melted and golden brown, allow the pizza bites to cool in the pan for 5 minutes. Transfer the bites to a wire rack and let them cool for an additional 10 minutes. Then, remove the parchment paper from the bottoms and arrange the bites on a platter.
