Try a delicious Hawaiian pizza tonight with a gluten-free cauliflower crust. Sweet, salty, and cheesy flavors in every bite!
Ingredients:
  • For the cauliflower crust
  • 2 cups cauliflower florets (7 ounces), 1/2-inch pieces
  • 1/2 cup corn flour (2 1/4 ounces 57 g) or masa harina
  • 1/4 teaspoon kosher salt
  • 2 tablespoons cornstarch
  • 3 ounces Parmesan cheese (1 1/2 cups grated)
  • For the toppings:
  • 1/2 cup pizza sauce, homemade or store-bought
  • 4 ounces mozzarella cheese, shredded
  • 5 slices Canadian bacon
  • 1/2 cup diced pineapples, fresh or canned
  • Black pepper, for garnish
  • Oregano, fresh or dried, for garnish
Instructions:
  • Preheat the oven to 475°F on the upper-middle rack.
  • Prepare the dough: Combine cauliflower florets, corn flour, egg, olive oil, and salt in a food processor. Blend on high, scraping the sides every 30 seconds, until a smooth and sticky puree forms (approximately 3 minutes). Incorporate cornstarch and blend for another 30 seconds. Lastly, add Parmesan cheese and pulse a few times until just mixed.
  • Prepare the crust: Grease a parchment paper with olive oil and place the pizza dough on it. Sprinkle corn flour on top and shape the dough into a 10-inch circle using your hands. Use a rolling pin to gently roll it into an 11-inch circle, adding more corn flour if needed to prevent sticking.
  • Bake the crust for 10 minutes until golden. Let it cool for 3 minutes, then slide a spatula under to remove and transfer to a wire rack on a baking sheet. Remove and discard the parchment paper.
  • Top the crust with a layer of pizza sauce, leaving a small border. Sprinkle with mozzarella cheese, then add ham slices and pineapple.
  • Bake the pizza until the cheese is bubbly and golden brown around the edges, 4 to 6 minutes.
  • Garnish your pizza with a sprinkle of black pepper and oregano. Slice and serve hot. Enjoy immediately. Leftovers can be kept for up to a week. To reheat, place the slices on a foil-lined baking sheet and bake at 375°F until the cheese is melted and the crust is warm and crisp, about 5-7 minutes.
