Hawaiian Pizza Quinoa Casserole

Hawaiian pizza casserole with ham, pineapple, and quinoa for a tropical twist.
Ingredients:
  • 1/4 cup olive oil
  • 1 1/2 cups uncooked quinoa, rinsed and drained
  • 2 1/4 cups water
  • Kosher salt, to taste
  • 1 medium onion, chopped into 1/2-inch pieces
  • 4 cloves garlic, finely chopped
  • Black pepper, to taste
  • Crushed red pepper, to taste
  • 1 box (9 oz) frozen spinach, thawed, squeezed to drain
  • 1 large tomato, chopped into 1/2-inch pieces
  • 1 cup chopped pineapple
  • 8 oz precooked ham, chopped into 1/2-inch pieces
  • 3/4 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (6 oz)
  • 3/4 cup shredded Parmesan cheese (3 oz)
  • 1/2 cup whole milk
Instructions:
  • Preheat oven to 400°F.
  • Heat 2 tablespoons of olive oil in a 4-quart saucepan over medium heat. Add quinoa and cook for about 5 minutes, stirring constantly until lightly toasted. Pour in water and a large pinch of salt, bring to a boil over medium-high heat, cover, and simmer for 15 to 20 minutes until all the water is absorbed and quinoa is cooked.
  • Heat 2 tablespoons of oil in a 10-inch skillet over medium heat. Sauté onion until soft and translucent, about 5-7 minutes. Stir in garlic, black pepper, and crushed red pepper, cook for an additional minute. Toss in spinach, tomato, pineapple, and ham. Cook until heated through, stirring constantly. Season with salt to taste.
  • Combine ricotta cheese, 1 cup of mozzarella, 1/2 cup of Parmesan, and milk in a small bowl or measuring cup.
  • Combine the quinoa and cheese mixture with the onion mixture in the skillet, gently folding them together. Adjust seasonings to taste. Spread the mixture evenly in a 13x9-inch (3-quart) casserole dish.
  • Sprinkle the remaining mozzarella and Parmesan cheese on top. Cover with foil and bake for 20 minutes. For a golden brown finish, remove the foil and broil for a few minutes if desired.
  • Serve right away, or cover with foil and keep warm in the oven until you are ready to serve.
