Vibrant lettuce wraps with savory cauliflower rice and zesty peanut sauce - a simple, low-carb vegetarian dish.
Ingredients:
  • 0.5 cup creamy peanut butter
  • 4 tablespoons hot water
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons toasted sesame oil
  • 6 button mushrooms, chopped
  • 4 green onions, chopped
  • 0.5 red bell pepper, chopped
  • 1 (10 ounce) package frozen riced cauliflower, thawed and drained
  • 1 medium carrot, shredded
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 6 leaves Bibb lettuce
  • 1 tablespoon chopped fresh cilantro, or to taste
Instructions:
  • Combine peanut butter, hot water, Sriracha, soy sauce, and sesame oil in a bowl and whisk until smooth. Set the sauce aside.
  • In a large skillet over medium-high heat, heat up 2 tablespoons of fragrant sesame oil. Add in mushrooms, green onions, and bell pepper, and sauté for 4 minutes. Stir in cauliflower rice, carrot, soy sauce, and lime juice, and cook until all the liquid has been absorbed, approximately 6 minutes.
  • Place the flavorful cauliflower mixture onto crisp lettuce leaves, drizzle with the delicious sauce, and finish with a sprinkle of fresh cilantro for a beautiful presentation.
