Cauliflower Rice Stroganoff

Creamy mushroom stroganoff over cauliflower rice with white wine and onions.
Ingredients:
  • 1 (20 ounce) bag frozen cauliflower
  • 2 tablespoons olive oil
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon onion powder
  • 2 (4 ounce) cans sliced mushrooms, drained
  • 0.75 cup milk
  • 0.25 cup white wine
Instructions:
  • Microwave cauliflower in a bowl until softened, for about 1 minute.
  • Process cauliflower in a food processor until it resembles rice grains.
  • In a skillet over medium heat, warm olive oil, then melt butter. Add cauliflower, salt, pepper, and onion powder. Stir in mushrooms and milk, let it come to a boil, pour in white wine. Lower heat and simmer until sauce thickens, around 10 minutes.
