Vegetarian cauliflower 'steak' topped with onions, mushrooms, and gooey Havarti cheese.
Ingredients:
  • 1 head cauliflower
  • 2 tablespoons olive oil, or as needed, divided
  • 0.5 cup water
  • 1 onion, chopped
  • 1 cup sliced mushrooms
  • 3 slices Havarti cheese, or more to taste
Instructions:
  • Slice cauliflower into 3 or 4 thick 'steaks', discarding the stem and leaves from each steak with a sharp knife, and keep any loose florets.
  • In a large skillet over medium heat, sizzle 1 tablespoon of olive oil until fragrant. Sear cauliflower 'steaks' until golden, about 3 to 4 minutes on each side. Toss in florets and water, cover, and let it steam until cauliflower reaches desired tenderness, about 10 to 15 minutes.
  • In a separate skillet over medium heat, heat the remaining tablespoon of olive oil. Saute the onion until fragrant for about 2 minutes, then add the mushrooms and continue sauteing until the onion is lightly browned and the mushrooms are tender, which should take around 10 to 15 minutes.
  • Position the oven rack 6 inches below the broiler and preheat the broiler in the oven.
  • Place cauliflower 'steaks' and florets on a baking sheet. Spread the onion-mushroom mixture on top and finish by layering Havarti cheese over everything.
  • Broil until the cheese is gooey and bubbly, 2 to 3 minutes in the preheated oven.
