Surprise your family with a savory and nutty cauliflower side dish enhanced by a secret ingredient, anchovy paste.
Ingredients:
  • 2 teaspoons olive oil
  • 0.25 pound bacon, diced
  • 1 head cauliflower, cut into florets
  • 5 plum tomatoes, seeded and cut into eighths
  • 2 cloves garlic, minced
  • 0.5 cup chicken stock
  • 0.33333334326744 cup balsamic vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon anchovy paste
  • salt and pepper to taste
  • 1 tablespoon chopped fresh flat-leaf parsley
Instructions:
  • In a large skillet over medium-high heat, sizzle bacon in olive oil until just softened, about 3 minutes. Stir in cauliflower and sauté until lightly browned, stirring often, for 5 to 7 minutes.
  • Combine tomatoes and garlic with the cauliflower mixture, stirring and cooking for 2-3 minutes. Add chicken stock, balsamic vinegar, sugar, and anchovy paste, then mix well.
  • Cover the skillet and simmer on low until the cauliflower is tender, about 5 more minutes. Remove the lid and increase the heat to medium-high. Cook until the liquid is reduced, about 5 minutes. Season with salt and pepper, then garnish with parsley before serving.
