Elevate roasted cauliflower with a rich and sweet balsamic vinegar glaze, mushrooms, onions, and bell peppers for a taste of Italy.
Ingredients:
  • 1 head cauliflower, cut into florets
  • 5 large mushrooms, coarsely chopped
  • 4 cloves garlic, sliced
  • 0.25 medium red onion, sliced
  • 0.25 medium red bell pepper, sliced
  • 0.25 medium yellow bell pepper, sliced
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Combine cauliflower, mushrooms, garlic, red onion, red and yellow bell peppers, olive oil, vinegar, salt, and pepper in a large bowl. Then, transfer the mixture into a 2-quart baking dish. Enjoy!
  • Roast in the preheated oven for 30 minutes or until the cauliflower is tender. Serve immediately.
