Spicy cayenne chicken drumsticks with creamy blue cheese sauce - a keto-friendly twist by Katie Quinn Davies.
Ingredients:
  • 12 chicken drumsticks
  • 30.00 ml plain flour
  • 1/2 tsp cayenne pepper
  • 2.50 gm smoked paprika
  • 3 egg yolks
  • 200ml sunflower or canola oil
  • 42.00 gm lemon juice
  • 20.00 ml white vinegar
  • 1 heaped tsp Dijon mustard
  • 37.60 gm light sour cream
  • 150g mild blue cheese
  • Celery stalks, to serve
Instructions:
  • Preheat the oven to 180°C and prepare a baking tray by lining it with parchment paper.
  • After drying the chicken, toss it in a ziplock bag with flour, cayenne, paprika, black pepper, and a pinch of salt until evenly coated. Place chicken on a baking tray and bake at 375°F for 40 minutes, flip, and bake for another 20 minutes until golden and crispy. Brush with pan juices and keep warm.
  • Blend yolks in a food processor until velvety. Gradually pour in oil while blending until mixture is luscious. Incorporate lemon juice, vinegar, mustard, sour cream, and cheese. Season, blend until smooth. Serve chicken with sauce and celery.
