Elevate your dinner with this luxurious celeriac and potato puree.
Ingredients:
  • 3 small (about 1.3kg) celeriac, peeled, chopped
  • 2 medium potatoes, peeled, chopped
  • 1 garlic clove, peeled
  • 100g soft butter
  • 60ml cream
  • Pinch of freshly grated nutmeg, plus extra to serve
  • Extra virgin olive oil, to serve
Instructions:
  • Boil celeriac, potato, and garlic in a large saucepan for 15 minutes or until tender. Drain thoroughly.
  • Combine celeriac and garlic in a food processor, blend until smooth. Add potato and butter, briefly blend until smooth. Be cautious not to overprocess as the potato may become starchy. Mix in cream and nutmeg, season with salt and white pepper. Transfer to a saucepan over low heat. Stir for 2 minutes until heated through. Serve by spooning into a bowl, drizzling with oil, and sprinkling with nutmeg.
