Enjoy a vibrant and nutritious dinner with this fruity, veggie, and chicken dish.
Ingredients:
  • Olive oil spray
  • 3 (about 500g) single chicken breast fillets
  • 1 egg yolk
  • 42.00 gm fresh lemon juice
  • 5.90 gm wholegrain mustard
  • 125ml (1/2 cup) olive oil
  • 4 large celery sticks, ends trimmed, thinly sliced
  • 2 red apples, quartered, cored, cut into thin wedges
  • 1 bunch radishes, trimmed, thinly sliced
  • 1 bunch parsley, leaves picked
Instructions:
  • Grease a large non-stick frying pan lightly with olive oil spray over medium heat. Cook the chicken for 4-5 minutes on each side until fully cooked. Let it rest for 10 minutes, then slice the chicken into 1cm-thick pieces cutting across the grain.
  • In a food processor, blend egg yolk, lemon juice, and mustard until smooth. Slowly drizzle in the oil while processing until the mixture becomes thick and pale. Season with salt and pepper to taste.
  • Combine celery, apple, radish, and parsley in a large bowl, toss gently. Portion into serving bowls, top with chicken, drizzle with dressing, season with pepper, and serve promptly.
