Char siu pineapple and pork skewers recipe

Quick and affordable summer BBQ meal, ready in 20 minutes!
Ingredients:
  • 500g pork fillet
  • 1 large red capsicum
  • 1 large red onion
  • 400g pre-chopped fresh pineapple chunks
  • 80ml (1/3 cup) char siu sauce
  • 450g packet microwave white rice
  • 1 bunch fresh coriander
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Dice the pork and capsicum into 2cm pieces and the onion into 2-3cm pieces, ensuring you have a total of 24 pieces of each ingredient.
  • Alternate threading capsicum, onion, pineapple, and pork onto a metal or presoaked bamboo skewer, repeating once more. Make a total of 12 skewers. Arrange them on a large baking tray and generously brush with char siu sauce.
  • Preheat a chargrill pan over medium-high heat while microwaving rice according to packet instructions.
  • Cook the skewers in the hot pan, turning occasionally and brushing with the remaining sauce, for about 10 minutes or until the pork is cooked through but still juicy.
  • Chop the coriander leaves and stems, mix with rice, then serve on plates with skewers and sesame seeds on top.
