Quick and delicious stir-fry is ideal for busy weeknight dinners.
Ingredients:
  • 18.20 gm peanut oil
  • 500g veal scotch fillet, trimmed, cut into thin strips
  • 150g button mushrooms, sliced
  • 100g broccoli, cut into small florets
  • 1 red capsicum, halved, deseeded, cut into thin strips
  • 6cm piece ginger, peeled, grated
  • 60ml char sui sauce
  • 120g pkt fresh baby oriental salad leaves
  • Steamed Basmati rice, to serve
Instructions:
  • In a wok or frying pan over medium-high heat, brown the veal in batches in heated peanut oil for 1-2 minutes. Transfer to a bowl and set aside.
  • Add the mushrooms, broccoli, capsicum, garlic, and ginger to the wok along with 2 tablespoons of water. Stir-fry until just tender, for 2-3 minutes.
  • Add the veal back to the wok along with the char siu sauce and oriental leaves. Toss everything together until it boils and the leaves are just wilted. Serve with rice.
