Create a delicious chicken and vegetable rice dish with just a few simple ingredients.
Ingredients:
  • 165.00 ml char sui sauce (Chinese barbecue sauce)
  • 8 chicken thigh cutlets, skin on
  • 200.00 gm basmati rice, rinsed
  • 1 large carrot, peeled, diced
  • 100g baby spinach, roughly chopped
  • 125g can corn kernels, drained
Instructions:
  • Preheat your oven to 200°C. Line a large roasting pan with baking paper. In a jug, mix char sui sauce with 2 tablespoons of hot water. Arrange chicken in the pan and pour the sauce over it, making sure to coat all sides.
  • Roast the chicken skin side up until the sauce is sticky and the chicken is fully cooked, approximately 50 to 60 minutes.
  • Combine rice, carrot, and 2 1/2 cups cold water in a saucepan over high heat. Bring to a boil, then reduce heat to medium and simmer uncovered for 8 to 10 minutes until liquid is nearly absorbed. Remove from heat, add spinach and corn kernels, cover, and let stand for 10 minutes. Gently fold spinach and corn into the rice mixture.
  • Serve chicken over a bed of fluffy rice in individual bowls.
