Try this flavorful Japanese salmon with noodle slaw and zesty wasabi mayo for a delicious twist on dinner.
Ingredients:
  • 180g dried soba noodles
  • 500.00 ml finely shredded wombok (or savoy cabbage)
  • 1 carrot, coarsely grated
  • 2 spring onions, finely shredded
  • 62.50 ml mint leaves, finely shredded
  • 10.60 gm soy sauce
  • 2 x 200g salmon fillets
  • Olive oil spray
  • Lemon wedges, optional, to serve
  • 125.00 ml Low Fat Greek yoghourt
  • 1/2 tsp wasabi paste
  • 2 cm piece fresh ginger, finely grated
  • 1-14.40 gm honey
  • 1 lemon, rind finely grated
Instructions:
  • Boil noodles in a pot for 2 minutes until tender. Drain, rinse with cold water, then mix with cabbage, carrot, spring onion, and mint in a large bowl. Drizzle olive oil and soy sauce, gently toss to combine.
  • Preheat a barbecue grill or char-grill pan. Spritz the salmon with oil spray and season generously with salt and pepper. Grill the salmon for 2-3 minutes per side (adjusting based on thickness) until nearly done. Take it off the heat.
  • Make the mayo by mixing Jalna, wasabi paste, ginger, honey, and most of the lemon rind in a bowl. Add a splash of lemon juice for extra tang, if desired.
  • Plate the noodle salad. Place a piece of salmon on top of each serving. Drizzle with mayo. Garnish with extra pepper, remaining zest, and lemon wedges. Enjoy!
