Chargrilled paprika chicken

Get grilling for a simple and speedy barbecue feast.
Ingredients:
  • 5.00 gm spicy barbecue seasoning
  • 10.00 gm sweet paprika
  • 4 (200g each) chicken breast fillets
  • olive oil cooking spray
  • 2 limes, halved (see note)
  • 2 corn cobs, quartered
  • steamed brown rice, to serve
Instructions:
  • Mix the seasoning, paprika, garlic, and 1 tablespoon of cold water in a shallow ceramic dish. Add the chicken and coat it evenly.
  • Prepare your barbecue plate or chargrill by spraying with oil and heating over a medium flame. Grill the chicken for 6 to 8 minutes on each side until fully cooked. Remove from the grill and let it rest on a plate, covered, for 5 minutes before serving.
  • Char limes cut side down for about 1 minute until they develop a nice char.
  • Bring a saucepan of water to a boil over high heat. Add corn and cook for 5 minutes until tender. Drain.
  • Present the chicken alongside a bed of fluffy rice, sweet corn, and a wedge of zesty lime for a delightful meal.
