Chargrilled squid & cannellini beans

Succulent chargrilled squid with creamy cannellini beans - impressive, easy, and quick to make!
Ingredients:
  • 2 fresh red chillies
  • ½ a bunch of flat-leaf parsley (15g)
  • 2 lemons
  • extra virgin olive oil
  • 8 squid cleaned, gutted, from sustainable sources
  • olive oil
  • 2 cloves of garlic
  • 2 x 400 g tins of cannellini beans
  • red wine vinegar
  • 200 g rocket
Instructions:
  • To prepare the salsa, finely chop 2 fresh red chillies and roughly chop ½ bunch of flat-leaf parsley (15g). Place them in a bowl and zest 2 lemons and squeeze in the juice. Add 3 tablespoons of extra virgin olive oil, mix well, and season to taste. Score the insides of 8 squid tubes and place a pan over medium heat with 1 tablespoon of olive oil. Cook 2 finely sliced garlic cloves until golden, then add 2 x 400g tins of cannellini beans and simmer until thickened. Add 1 tablespoon of red wine vinegar and season to taste. Char the squid on a griddle pan for 1 to 2 minutes per side. Serve the beans on a platter, top with squid, salsa, and 200g of rocket. Enjoy with grilled bread rubbed with garlic and olive oil.
