Chargrilled whole squid

Impress at dinner parties with quick and easy whole squid dish.
Ingredients:
  • 4 medium-sized whole squid from sustainable sources, ask your fishmonger, cleaned and prepared, wings left on
  • 1 tablespoon fennel seeds
  • sea salt
  • freshly ground black pepper
  • 2 lemons zest and juice of
  • extra virgin olive oil
  • 2-3 red chillies deseeded and sliced
  • 1 handful of fresh mint finely chopped
  • 1 lemon cut into wedges, to serve
Instructions:
  • Gently lay the first squid on a cutting board with its wings down. Secure a large knife inside horizontally. Carefully slice the squid, creating a concertina effect, ensuring not to cut through thanks to the knife inside. Repeat with the remaining squids. In a mortar, grind fennel seeds with salt and pepper into a powder. Sprinkle the mixture over the squid, ensuring it gets into the cuts. Grill the squid on high heat, rotating every 30 seconds until opaque and white, for a few minutes. Mix lemon juice with extra virgin olive oil, zest, chili, mint, salt, and pepper. Drizzle over the squid and serve with lemon wedges.
