Grilled haloumi enhances this flavorful low-calorie squid salad.
Ingredients:
  • 42.00 gm lemon juice
  • 56.88 gm olive oil
  • 600g squid tubes, scored, cut into 5cm pieces (see tip)
  • 250g haloumi, drained, thickly sliced
  • 70g baby rocket leaves
  • crusty bread, to serve
Instructions:
  • Combine garlic, lemon juice, and olive oil in a ceramic dish, then season with salt and pepper. Whisk the mixture until well combined. Set aside 2 tablespoons of the garlic mixture. Add squid to the remaining mixture, toss to coat, cover, and let it marinate for 10 minutes.
  • Heat a barbecue plate or chargrill over medium heat while brushing haloumi lightly with 1 tablespoon of reserved garlic mixture. Chargrill each side for 1 minute or until golden, then transfer to a plate.
  • Chargrill squid in batches for 30 seconds on each side or until fully cooked.
  • In a bowl, mix together lentils, arugula, and haloumi. Add squid on top. Drizzle the remaining garlic mixture over the dish. Serve with crusty bread.
