Delicious smoky squid paired with creamy guacamole - a winning combination!
Ingredients:
  • 2 x 150 g squid ask your fishmonger, tubes cleaned and kept whole, and tentacles, from sustainable sources
  • olive oil
  • extra virgin olive oil
  • ½ lime
  • 1-2 fresh red chillies
  • a few sprigs of fresh coriander
  • ½ red onion
  • 1 tomato
  • 2 very ripe avocados
  • 2 limes
Instructions:
  • For the guacamole, finely chop the chilli and coriander. Peel, finely chop the onion, and chop the tomato. Squeeze the avocados into a bowl, removing the stones. Add most of the chilli and coriander, all the onion and tomato, and lime juice. Mix well, adjusting seasoning with salt and pepper as needed. To prepare the squid, choose your preferred method or do both. Season with salt and pepper, drizzle with olive oil, and grill on high heat for 1-2 minutes per side. Finish with olive oil, lime juice, salt, and pepper. Serve the grilled squid on a platter with guacamole. Drizzle with olive oil, garnish with coriander and chilli, then enjoy.
