Chargrilled sweet corn salad

Delightful summer salad with corn, snow peas, and avocado for a refreshing crunch.
Ingredients:
  • 2 sweet corn, husks and silk removed
  • 42.00 gm fresh lime juice
  • 18.20 gm extra virgin olive oil
  • Salt & freshly ground pepper
  • 80g snow pea sprouts
  • 2 avocados, halved, stone removed, peeled, chopped
  • 120g feta, crumbled
Instructions:
  • Preheat a chargrill pan over medium-high heat. Coat the corn with olive oil. Grill, turning frequently, for 8 minutes or until golden brown.
  • Stand the cob upright and carefully slice down with a knife to remove the kernels. Repeat with the second cob. Combine lime juice, extra virgin olive oil, salt, and pepper, mixing well.
  • Distribute the snow pea sprouts, avocado, and warm corn kernels evenly onto serving dishes. Drizzle with the dressing and top with scattered feta before serving.
