Barbecued Mexican sweet corn

Enjoy delicious chargrilled corn topped with butter, feta, and jalapenos straight from the grill!
Ingredients:
  • 4 corncobs
  • 20g butter
  • 40g jalapenos, chopped
  • 40g feta, crumbled
  • Fresh coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Peel back the husks on 4 corncobs, discard the silks, and cover the corncobs again.
  • Preheat a lightly oiled barbecue or chargrill over medium-high heat. Grill corn for 10 minutes, rotating occasionally until charred on all sides and tender. Remove from heat.
  • Separate husks and evenly distribute butter, chopped jalapenos, and crumbled feta among the corn. Sprinkle with coriander leaves and serve with lime wedges.
