Delicious crowd-pleasing breakfast casserole featuring a tasty crouton and Cheddar cheese base with bell peppers and bacon, easily customizable for any occasion.
Ingredients:
  • 12 slices bacon
  • 0.25 cup butter, melted
  • 3 cups croutons
  • 2 cups grated Cheddar cheese
  • 6 eggs
  • 1.75 cups milk
  • 1 bell pepper (any color), diced
  • 1 tablespoon prepared mustard
  • salt and pepper to taste
Instructions:
  • In a large, deep skillet, sizzle the bacon until it's perfectly browned. Afterward, crumble it up and set it aside.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Melt the butter until smooth either in the microwave or a small pan over low heat. Coat a 9x12 inch baking dish with vegetable spray. Place croutons at the bottom of the dish and pour the melted butter over them. Sprinkle with grated Cheddar cheese.
  • In a bowl, crack eggs and whisk vigorously until yolks are broken. Add milk, peppers, mustard, salt, and pepper, then beat until fully combined. Pour mixture over croutons and cheese, and top with crumbled bacon before serving.
  • Bake in the preheated oven for 40 minutes, then let it rest for 10 minutes before serving.
