Savory Carolina red rice: Baked rice with tomato, bacon, and onion for a flavorful tradition.
Ingredients:
  • 6 cups boiling water
  • 2 cups uncooked long-grain white rice
  • 1 tablespoon salt
  • 6 slices bacon
  • 2 onions, chopped
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon white sugar
  • 2 teaspoons Worcestershire sauce
  • 1 dash hot pepper sauce
Instructions:
  • Preheat your oven to 325°F (165°C) and grease a 2-quart baking dish.
  • In a saucepan, bring water, rice, and salt to a lively boil. Lower the heat to medium-low, cover, and gently simmer until the rice is tender and has absorbed most of the liquid, about 20 to 25 minutes.
  • After the rice is started, crisp up bacon in a large skillet over medium-high heat for about 10 minutes until beautifully browned. Set aside 1 tablespoon of bacon grease in the skillet. Lower the heat to medium, then transfer the cooked bacon to a paper towel-lined plate to cool down; once cooled, crumble it up.
  • In the bacon drippings, sauté onions until translucent, for 5 to 8 minutes. Add crumbled bacon, tomato sauce, tomato paste, sugar, Worcestershire sauce, and hot sauce; bring to a simmer, then reduce heat and let it simmer for 10 minutes.
  • Transfer the cooked rice into the baking dish and gently fold in the tomato-bacon mixture until well incorporated.
  • Bake the dish covered in the preheated oven for 45 minutes.
