Charred Citrus Dressing

Transform salad dressing with smoky charred citrus for endless flavor possibilities.
Ingredients:
  • 1 tablespoon olive oil
  • 2 lemons
  • 2 limes
  • 1 clove garlic
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon ground black pepper
  • 1 cup neutral oil, such as grapeseed, avocado, or vegetable
Instructions:
  • Char the citrus slices: Thinly slice 1 lemon and 1 lime, about 1/4 inch thick, and remove the seeds. Heat olive oil in a large cast iron or non-stick skillet over medium-high heat until rippling. Add lemon and lime slices in a single layer without overlapping. Cook for 3 minutes until browned and charred in spots. Flip using tongs or a fork and cook the other side for 1 to 2 minutes. Turn off heat.
  • Prepare the dressing: Combine charred citrus in a blender with 2 tablespoons each of lemon and lime juice. Add garlic, salt, and black pepper. Blend on medium speed for 15 seconds until broken down. Remove lid center cap and drizzle in oil slowly for about 30 seconds. If needed, cover partially with a towel to prevent splattering. Increase speed to medium and blend for an additional 15 seconds until emulsified and smooth.
  • Serve the warm dressing immediately or transfer it to a lidded container such as a mason jar, cool it, and refrigerate until ready to use.
