Creamy chicken and veggie noodle casserole topped with melted Monterey Jack cheese and crispy breadcrumbs.
Ingredients:
  • 1 (8 ounce) package egg noodles, cooked
  • 2 skinless, boneless chicken breast halves - cut into cubes
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1.25 cups milk
  • 1 (14.5 ounce) can peas and carrots, drained
  • paprika to taste
  • 1 teaspoon chili powder
  • 4 slices Monterey Jack cheese
  • 4 slices soft white bread, cubed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then gracefully layer your cooked egg noodles in a 9x13 inch baking dish and set aside.
  • Cook cubed chicken and onion in a large skillet over medium high heat for 7 to 10 minutes until chicken is cooked through. Add soup, milk, peas, and carrots. Season with salt, pepper, paprika, and chili powder to taste. Simmer until bubbly, then remove from heat.
  • Mix the flavorful chicken blend into the noodles in the baking dish until evenly incorporated. Arrange cheese slices on top, followed by the bread cubes for a delicious finish.
  • Bake the bread at 350 degrees F (175 degrees C) for around 30 minutes until it's toasted; serve while hot.
