Cheat's cheesy one-pan lamb pastitsio

Indulgent one-pot lamb pastitsio, a cheesy winter favorite for the whole family!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, thinly sliced
  • 2 garlic cloves, crushed
  • 2.50 gm ground cinnamon
  • 1 tsp ground allspice
  • 500g lamb mince
  • 123.75 gm dry red wine
  • 2 x 400g cans diced Italian tomatoes with basil and oregano
  • 510.00 gm chicken style liquid stock
  • 300g dried macaroni
  • 250g packet zucchini spaghetti (see note)
  • 375g smooth ricotta
  • 3 eggs
  • 62.50 ml plain flour
  • 187.50 ml plain Greek-style yoghurt
  • 250.00 ml grated tasty cheese
  • 50g fetta, crumbled
  • 20.00 ml finely chopped fresh flat-leaf parsley
Instructions:
  • Preheat oven to 220°C (200°C fan-forced).
  • In a large, deep frying pan over medium-high heat, heat oil. Add onion and cook for 5 minutes until softened. Stir in garlic, cinnamon, and allspice, and cook for 30 seconds until fragrant.
  • Brown the mince by cooking it with a wooden spoon for 8 minutes. Pour in the wine and let it cook for 2 minutes until the amount reduces by half. Mix in the tomatoes and stock, then bring it to a boil. Lower the heat to medium, stir in the pasta, and cook for 15 minutes while stirring occasionally until the pasta is almost tender. Finally, add the zucchini and season with salt and pepper.
  • In a bowl, combine ricotta, eggs, flour, yogurt, and 1/3 of tasty cheese using a whisk. Season with salt and pepper. Pour mixture over pasta, spread evenly, and top with remaining tasty cheese and feta. Bake until cheese turns golden, approximately 25 minutes. Let it rest for 5 minutes, then garnish with parsley before serving.
