Ingredients:
  • 82.50 ml chocolate hazelnut spread
  • 2 tsp instant espresso coffee powder
  • 10.00 gm hot water
  • 480.00 gm premium extra thick vanilla custard (see notes)
  • 34.40 gm demerara sugar
Instructions:
  • Preheat the grill on high heat. Divide and spoon 1 tablespoon of hazelnut spread into the base of four 3/4 cup-capacity ovenproof ramekins.
  • In a small bowl, combine coffee powder and hot water until dissolved. Add this coffee mixture to the custard in another bowl, gently folding until well combined. Divide the mixture among ramekins, smoothing the tops, and finish by sprinkling with sugar.
  • Line a large baking dish with a damp tea towel. Arrange ramekins on top. Surround ramekins with ice cubes to prevent custard from overcooking. Grill for 5 minutes or until sugar is melted and caramelized. Serve.
