Cheat's lemon curd cake

Whip up a speedy no-bake dessert with sponge cake, lemon curd, pineapple, passionfruit, and coconut for an impressive treat!
Ingredients:
  • 450g can crushed pineapple in syrup
  • 300ml thickened cream
  • 175g lemon curd, plus extra, to drizzle
  • 460g pkt unfilled double sponge cake
  • 55.00 gm sweetened coconut flakes
  • Passionfruit pulp, to serve
Instructions:
  • After draining the pineapple, save the syrup. Whip the cream in a bowl using electric beaters until soft peaks form, then gently fold in the lemon curd.
  • Cut each cake in half horizontally using a large serrated knife. Place one cake layer on a serving plate and generously drizzle with the reserved pineapple syrup. Spread a generous amount of the lemon cream on top. Sprinkle one-third of the crushed pineapple over the cream. Add another cake layer on top and continue layering with pineapple syrup, lemon cream, crushed pineapple, and cake layers.
  • Spread the remaining luscious lemon cream over the top and sides of the layered cake, then elegantly press coconut flakes onto the side for a delightful finishing touch.
  • Before serving, generously drizzle the cake with passionfruit pulp and extra lemon curd.
