Whip up a quick and decadent cheat's lemon curd pavlova with Raffaellos, fresh mint, and vibrant pomegranate seeds in just 20 minutes.
Ingredients:
  • 600ml thickened cream
  • 300g box meringue discs
  • 37.50 gm icing sugar mixture
  • 420g tub lemon curd
  • 12 Raffaellos
  • Small fresh mint leaves, to serve
  • Pomegranate seeds, to serve
  • White chocolate stars, to serve
Instructions:
  • Whip cream with an electric mixer until it forms soft peaks.
  • Assemble the dessert by placing a meringue disc on a serving plate, layering with 1/3 of the whipped cream and half the lemon curd. Add another meringue disc and layer with half of the remaining cream and the rest of the lemon curd. Finish with the last meringue disc and the remaining cream, then garnish with Raffaellos, mint, and pomegranate seeds.
