Cheddar and green chilli stuffed sweet potatoes

Create flavorful sweet potato parcels with just six simple ingredients.
Ingredients:
  • 4 (200g each) small orange sweet potatoes
  • 36.40 gm olive oil
  • 2 green onions, thinly sliced
  • 1 long green chilli, finely chopped
  • 125.00 ml finely grated cheddar
  • Sour cream, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Arrange potatoes on a baking tray, drizzle with oil, and season with salt and pepper. Bake for 45 minutes until tender. Let them cool for 5 minutes, then increase oven temperature to 220C/200C fan-forced.
  • - Trim off the tops of the potatoes, then hollow out the flesh, leaving a 1cm border. - Mash the potato flesh, season with salt and pepper, then mix in the onion, chili, and half of the cheddar. - Stuff the potatoes with the filling and top with the remaining cheese before baking.
  • Place the potatoes back on the baking tray and bake for 8 to 10 minutes until they are heated through. Serve them with a dollop of sour cream on top.
