A winning potluck salad featuring layers of ranch, spicy chicken, and crispy bacon flavors.
Ingredients:
  • 3 boneless skinless chicken breasts
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 6 cups torn romaine lettuce
  • 1 bag Chex Mix™ cheddar snack mix
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 cup crumbled cooked bacon
  • 2 green onions, sliced
  • Ranch dressing
Instructions:
  • Place the chicken breasts in a 10-inch skillet and generously pour over the flavorful enchilada sauce. Cover the skillet and cook over medium heat for 20-25 minutes, or until the chicken's thickest part reaches at least 165°F and the juices run clear.
  • Shred the chicken using two forks, then refrigerate to cool.
  • Right before serving, in a 6-quart trifle bowl or glass bowl, layer in this order: delicately spoon chicken mixture into the bowl, ensuring the sides remain clean. Add romaine lettuce, Chex™ mix, cheese, bacon, and finish with green onions on top.
  • Drizzle the dressing over the top or serve it on the side for customizable enjoyment.
