Cheese biscuits: perfect for a classy spread.
Ingredients:
  • 130g plain flour
  • 170g cheddar cheese
  • 75g butter, chilled, cubed
  • 2.00 gm baking powder
  • 1.20 gm salt
  • 1/4 tsp cayenne pepper (optional)
  • 40.00 ml poppy seeds
  • Smoked salmon dip mixed with chopped fresh dill, to serve
Instructions:
  • Add flour, cheddar, butter, baking powder, salt, and cayenne pepper to a food processor and pulse until you have a crumbly mixture.
  • Combine 1-2 tablespoons of cold water with the dough and pulse until it forms a cohesive mixture.
  • Gently knead the dough on a lightly floured surface until smooth. Then, roll it into a 4 x 25cm long log. Next, coat the log with poppy seeds by rolling it on a chopping board. Finally, wrap it in plastic wrap and refrigerate for 4 hours, or until firm.
  • 1. Preheat your oven to 200°C. Line two baking trays with non-stick baking paper. 2. Slice the log thinly and arrange on the prepared trays. 3. Bake for 10-12 minutes until golden brown. 4. Transfer to a wire rack to cool. 5. Serve with smoked salmon dip and fresh dill.
